It’s rainy and cold in the Pacific Northwest. That makes me want to cook. When I’m hungry and it’s cold outside, I love a good comfort food. My go-to comfort food recipe is Maria Hazan’s Bolognese sauce.
I regularly cook without a recipe or change ingredients if I do. Hazan’s bolognese is the exception. This recipe is so amazing, I don’t change a thing. I’ve cooked this several times and simply love it.

Traditionally, bolognese is served over pasta. I like it over baked spaghetti squash.

I’d like to offer a few tips. Pasta water should be well salted and al dente. Cook the sauce slowly and if possible eat it the next day. It tastes even better. Gosh I love this sauce. So… Off to cook! Hope you try it and enjoy!
